Taken from tenderloin, which bears no weight, the meat is lean with less connective tissue than other cuts and its natural flavour is enhanced. Ideally served rare or medium rare, you could slice your fillet steak razor thin and serve as melt in your mouth Carpaccio, or finely chop and season it to make Steak Tartare. Whatever preparation method you choose, the quality of this signature cut will shine through and create a dish worthy of a special occasion.

Cooking Instructions

When removing the steaks from packaging, make sure they are brought to room temperature before cooking. Once seasoned cook on a high heat making sure the steak is only turned when a rich and golden crust has formed. For medium/rare make sure you cook for 3-4 minutes each side. Before carving make sure you leave in a warm place for 5 minutes.
