Our quality pork leg joint makes for a delicious, lean dish perfect for slow roasting, pot-roasting and marinating. The creamy layering of fat delivers a rich, juicy and succulent finish to the meat, keeping it moist and tender. Try roasting alongside a selection of root vegetables, garlic and thyme and serving with a rich gravy made from the caramelised bits on the bottom of the roasting tin. This is a fine example of traditional pork butchery, the leg is boned, trimmed, and rolled to produce a roasting joint with sufficient fat cover to give the meat its rich flavour and natural juiciness. All our pork comes from native British pigs, free to roam the pastures and growing at natural rates, which in turn ensures a healthy, tasty meat.

Cooking Instructions

To Oven Cook: Preheat the oven to 180°. Place the pork in a roasting tin, score the meat all over with a sharp knife, brush with olive oil and season with salt and pepper. Roast for 60-90 minutes until golden-brown and crisp. At the end of the cooking time, pierce the thickest part of the meat with a skewer, if the juices come out clear, remove from the oven, cover in aluminium foil and allow to rest in a warm place for 10 minutes. Alternatively, you can cook using a slow cooker. Simply add two pints of hot water to the cooking pot (this will make a delicious gravy) then cook on low for 6-7 hours. Roast pork is delicious served with our traditional apple sauce. If you have a probe thermometer you want the core temperature to be 65°.
