Our quality pork shoulder joint makes for a delicious dinner, perfect for slow roasting, as well as being suited to marinating. The creamy layering of fat delivers a rich, juicy and succulent finish to the meat, keeping it moist and tender. Try roasting alongside a selection of root vegetables, garlic and thyme and serving with a rich gravy made from the caramelised bits on the bottom of the roasting tin. This is a fine example of traditional pork butchery, the shoulder is boned, trimmed, and rolled to produce a roasting joint with sufficient fat cover to give the meat its rich flavour and natural juiciness. All our pork comes from native British pigs, free to roam the pastures and growing at natural rates, which in turn ensures a healthy, tasty meat.

Cooking Instructions

To oven cook: Preheat the oven to 220° In a small bowl, mix together olive oil, garlic, salt and pepper. Using a pastry brush, spread the mixture over the pork shoulder. Place the meat into a large roasting dish. Roast for 20 minutes, and then reduce the heat to 170°. Continue to cook for 3 hours 30 minutes, if you have a probe thermometer you want the core temperature to be 85°. Remove the pork from the oven and let stand until cool enough to handle, about 20 minutes. Carve and serve, we recommend our delicious apple sauce to accompany.
